ಕನ್ನಡದಲ್ಲಿ ಓದಲು ಇಲ್ಲಿ ಕ್ಲಿಕ್ ಮಾಡಿ 

Healthy food habits are good for everyone. Our daily food intake should have a balanced portion of pulses, dairy, fruits, nuts and other things. Being hard core vegetarians, I always try to serve the best food for my family.

Today, I am sharing a healthy recipe with you all. These Energy Balls are so delicious to eat, and comes very handy while you are on a trip, hiking, sports activity and also for kids snacks. I have not used any nuts in this recipe since my kids love to carry them for school snacks, and nuts are not allowed in school. You can use any combination of dried fruits and nuts for this recipe.

Preparation time: 20 - 25 minutes

Difficulty level: Medium

Yield: Around 23 balls of medium size

Ingredients:

  • Oats: 1 cup
  • Desiccated coconut: 1/2 cup
  • Pitted dates: 2 1/2 cup
  • Chia seeds: 4 tbsp
  • Cocoa powder: 2 tbsp
  • Orange zest: 1 tbsp
  • Coconut oil: 2 tbsp

Recipe Instructions:

  • Take the oats and make a coarse powder using a mixie or food processor.
  • Lightly roast the coarsely powdered oats, desiccated coconut and chia seeds separately and allow to cool. Each one would take a few minutes to turn aromatic.
  • Roughly chop the pitted dates and transfer it to mixie jar or food processor. Blend the dates till it turns into a sticky mixture. 
  • Add all the remaining ingredients to the dates mixture in 2 - 3 stages and run the mixie or food processor till everything blends well. I have used the 'whip' setting in the mixie to do this. 
  • Take small portions of dough, and shape them into balls of desired size. 
  • Transfer the Energy balls into an air tight container. They stay well at room temperature for 4 - 5 days. Or, you can store them in the refrigerator for 2 - 3 weeks. 

Tips:

  • Replace the ingredients with dried fruits and nuts of your choice.


 Broccoli is one of our family favourite vegetables. Kiddos love it because of the color and we, adults love it for its health benefits. I heard a few people won't like this vegetable for its distinct smell. But we love every dish prepared using broccoli. 

3 years back, my Mum and Dad were here with us for a few months. During that time, buying vegetables was not that easy for us as many vegetables we get here are totally different from what they get in India. When we go out for groceries, mum eyes usually look for only those veggies which are available in hometown! To my surprise, they both liked broccoli and she used to prepare Broccoli Stir Fry (Palya) 2 - 3 times a week during their stay. 

I would like to share the recipe of Broccoli - Potato Cutlet / Broccoli Patties with you all today. These patties are perfect for breakfast, snacks, starter and kids lunch box too. Below is the recipe of Broccoli - Aloo Cutlets:


  • Preparation time: - 25 - 30 minutes
  • Difficulty level: Medium
  • Servings: 2

Ingredients:

  • Broccoli florets - 2 cups
  • Medium size potato - 1
  • Chat masala powder - 1 tsp
  • Green chillies - 2 (adjust according to taste)
  • Onion - 1 (small)
  • Amchur powder / lime juice - 1/2 tsp
  • Salt - to taste
  • Bread crumbs - 1 cup or more
  • Oil - for shallow frying

Recipe Instructions:

  • Cook the potatoes till soft. I have halved the potato and pressure cooked till two whistles.
  • Finely chop the onion and crush the green chillies.  
  • Wash the broccoli florets and put them in a bowl. Add 1 tsp salt and about 4 cups of hot water. Leave them for 5 minutes.
  • Drain all the water and spread the broccoli florets on a kitchen towel for 4 - 5 minutes.
  • Pulse the broccoli florets in a mixie or blender coarsely without adding any water.
  • Peel the cooked potatoes, and mash it nicely.
  • Take a mixing bowl and add pulsed broccoli, mashed potato, crushed chillies, chopped onion, chat masala, amchur powder / lime juice and salt to taste. 
  • Also add 2 - 3 tbsp bread crumbs and mix everything well. 
  • Make lime sized balls and pat them into flat discs. 
  • Roll these discs in bread crumbs and shallow fry on hot tawa. Flip the discs a few time and cook till both the sides turn slightly brownish. 
  • Serve hot cutlets along with tomato sauce or your favourite dip. We would love to have it with coconut chutney!


Tips:

  • Green chillies can be replaced with red chilli powder.

Who loves chocolates? I know, most of us love chocolates. Chocolates are good to eat in any form and any time. Here is one easy and quick recipe using cooking chocolate and rice bubbles. I guess, rice bubbles can be replaced with our own Murmura (Mandakki) if its not salty; but I have not experimented it yet. These Choco treats are my kiddo's favourite snacks. Also, they are perfect for kids parties, food stalls, picnic and travels.

Preparation time: 15 minutes
Difficulty level: Easy
Serves - 27 byte size treats 

Ingredients:
  • Cooking chocolate (I have used dark cooking chocolate)- 100 gram 
  • Rice bubbles (plain, white ones) - 2 1/2 cup
  • Coconut oil (or Copha)- 1 1/2 tbsp 

Cooking method:
  • Heat coconut oil and cooking chocolate in a double boiler. Or, fill water in a wide pan upto 1/4th. Place a vessel inside and start heating. Put the oil and chocolate in the inner vessel. 
  • Keep mixing the mixture regularly. 
  • Once everything is melted and turns into a fine paste, fold in the rice bubbles.
  • Mix everything well and turn off the flame.
  • Scoop the mixture on a plate or into cupcake moulds. I have used small cupcake tray to make them cuter!
  • Keep the tray inside the fridge for 10 minutes.
  • Heat the bottom of the tray / plate for a second or two. This make it easy to unmould the choco crisps in no time. 
  • Have a byte or more. And store the remaining in an airtight container!



Mangoes are my all time favorite. For mango lovers like me, anything with mango tastes good! This year, we had enjoyed the mango season in India to the full extent and now, its the time for mangoes here in Australia! Last week, we had been to the market and saw plenty of delicious mangoes on the store racks. I just picked some and brought them home. Whenever there are plenty of mangoes, I love to prepare Mango Seekarane / Rasayana. This time also, I prepared Mango Seekarane and wanted my daughter to taste it. She is not very much fond of sweets and said 'no' to it, as expected. Instead, she wanted me to bake a cake for her. I just googled for the mango cake recipes and finally, this is the outcome!
This was my first baking attempt using mango. While searching the recipes, I just stopped at Julie's space and found her Mango Cake recipe interesting. I have made some small changes in the original recipe according to my preferences and prepared this delicious loaf cake. This cake is perfect for tea time and also for kids snacks. Give it a try and enjoy eating!


Preparation time: 15 minutes
Baking time: 35 - 40 minutes
Yield: 1 loaf
Difficulty level: Medium

Ingredients:
  • Maida / All purpose flour - 2 cups (my cup weighs around 75 gms)
  • Fine rava (semolina) - 1/2 cup
  • 1 large mango - fully ripened (which amounts to 2 cups of puree)
  • Sugar - 1 1/2 cup
  • Big pinch of salt
  • Milk - 1/2 cup
  • Oil - 1/2 cup
  • Baking powder - 2 tsp
  • Baking soda - 1 tsp
  • Saffron strands (optional) - 8 to 10

Method:
  • Combine maida and baking powder in a mixing bowl and sieve it 2 - 3 times. Fold in the rava and mix it once.
  • Pre heat the oven to 175 °C. Grease the loaf pan and keep it ready.
  • Remove the peel and the seed part of mango. Chop it and blend them along with saffron strands and make a thick puree.  
  • Add salt, sugar and milk to this puree and mix it till sugar dissolves completely. Add beking soda and oil and mix it lightly. 
  • Fold in the sieved maida little by little and prepare the dough.
  • Transfer the dough onto the greased loaf pan and bake it for 35 - 40 minutes until the toothpick inserted comes out clean. Mine got done exactly at 38 minutes. 
  • Allow it to cool down and cut into slices once it becomes cool. 


Tips:
  • You can substitute the fresh mango puree with store bought mango pulp.

As all of us know, fruits are very good source of nutrients needed for our body. For fruit lovers like me, anything that's made using fruits sounds delicious! Recently, we had enjoyed the season of grapes and enjoyed various dishes with fruits. Apart from regular fruit salad and ice creams, I wanted to try something new with fruits this time. What came to my mind is Fruit Sandwich which I had long back in a restaurant. I still remember the taste of that yummy sandwich filled with lots of seasonal fruits and cream. 
For various salads and ice creams, pineapple makes a good combo along with juicy grapes. I just used these two fruits along with cream for the filling. My family enjoyed eating this delicious sandwich for the evening snacks and everybody liked it. 
Below is the recipe of Fruit Sandwich for you! And here is a small tip before you go ahead for preparation..don't forget to keep all the ingredients refrigerated before using, coz the sandwich tastes better when its cool!


Preparation time: 30 - 35 minutes
Difficulty level: Medium
Yield: 8 pieces

Ingredients:
  • Sweet bread - 16 slices
  • Pineapple chunks - 2 cup
  • Fresh grapes - 2 cup
  • Powdered sugar - 1/4 cup
  • Water - 1 cup
  • Fresh cream - 200 gm

Method:
  • Dissolve 3 tsp of sugar powder in 1 cup of water and keep it aside.
  • Beat the fresh cream well and prepare the whipping cream. Add sugar powder for taste and mix it well. Keep it refrigerated till use.
  • Place two bread slices on the plate. Sprinkle 2 - 3 tsp of sugar syrup on both the sides. 
  • Spread a thick layer of whipping cream on one slice of bread. Top it generously with pineapple chunks and grapes.
  • Cover it with another slice of bread and serve immediately!


Tips:
  • Keep all the ingredients refrigerated before use. Fruit Sandwich tastes better when it is cool!

I came across this recipe few days back. It was written on the back of All purpose flour packet. They had used orange zest in this recipe to give it a nice flavor. Orange zest means the grated peel of orange. This was the first time I used orange zest in my cooking. Loved this simple recipe and gave it a try! Shortbread was light and crispy with the nice aroma of orange zest.
I have tried this recipe several times already and the shortbread got over within 2 days every time. I'm sure, kids love this yummy and crispy shortbread. Also, you can give it as teething biscuits to babies for biting.

Preparation time: 40 minutes
Difficulty level: Medium
Yield: 25 pieces (depending on the size)


Ingredients:
  • Zest of 2 Naval Oranges
  • Sugar - 1/2 cup (plus 2 tsp if you want to make it sweet)
  • All purpose flour / Maida - 3 cups (approx)
  • Unsalted butter - 125 gm

Method:
  • Transfer the sugar to mixie jar and make a fine powder. 
  • Let the butter be in room temperature. Beat it nicely and then add powdered sugar. Beat it till its fluffy and creamy. Add the orange zest and mix it well.    
  • Fold in the all purpose flour little by little and make a smooth dough. Keep adding the flour till you are able to make a dough ball out of it.  
  • Dust the rolling surface with some dry flour. Roll out the big dough ball into a large circle using a rolling pin and cut it into desired shapes. Rolling is not compulsory, you can make it into any shape of your choice.
  • Pre heat the oven to 170°C. Arrange the shaped shortbread pieces in the oven tray and bake them for 15 - 20 minutes or till golden brown. Take them out after 5 minutes and allow to cool.
  • Shortbread will become crispy once they cool down. Store them in an air tight jar and enjoy with your cup of tea or coffee!

These days, I am not able to update the blog regularly. Some recipe picks are waiting in my laptop for posting. But time goes like that with my little one and I am not getting enough time for my activities. Sometimes when I cook something new, I feel like taking picks of the same. By the time I start the photo shoot, either she will be hungry or it will be her sleeping time. Her voice will alter my concentration and makes me to stop the photo shoot there itself! These picks are also taken at least 3 months back and finally, I am able to write down the recipe now :)
Who says 'no' to the yummilicious Fruit Yogurt? It has become one of our favorite dessert from past couple of years. More often, we will get it from super markets which is available in various flavors like Strawberry, mixed berry, mango, etc. I wanted to prepare my own fruit yogurt from long time and after several trials, here is the outcome. Hope you like it!
Also, I feel its a nice way to feed the children some healthy food.
 

Preparation time: 10 minutes
Cooling time: 1 - 2 hours
Servings: 2

Ingredients:
  • Strawberries - 4 to 5
  • Sugar - 7 tsp or to taste
  • Hung curd - 1 cup
  • Vanilla essence (optional) - 1 or 2 drops   


Procedure:
  • Wash the strawberries and chop them finely.
  • Transfer the sugar and hung curd into mixie jar and run the mixie for a minute or till it becomes a smooth paste. You can use the hand mixer also for doing this.
  • Keep aside 2 tsp of chopped strawberries and combine the remaining with yogurt mixture. Run the mixie for half a minute so that the fruit pieces are blended nicely with curd. 
  • Finally, add the remaining fruit pieces and also, 1 -2 drops of vanilla essence if you desire. Run the mixie for 4 - 5 seconds and switch it off.
  • Keep it refrigerated for 1 - 2 hours for setting down. 
  • Enjoy the delicious Fruit Yogurt as dessert or as snack anytime!


Tips:
  • This yogurt should be consumed within 1 - 2 days of preparation. Since we didn't add any preservatives, it won't be good after 2 days.
